This is an incredible Mexican-style soup. It creamy, hot and delicious. It's also dairy-free and low fat. It's creaminess comes from soy milk and blended corn.

Vegan Ingredients

You will need these vegan ingredients when making Cream of Spinach and Chile Poblano Soup.
1 chile poblano, washed and without seeds

1 bag pre-washed organic spinach

1/3 red onion

2 cups soy or rice milk

1 can corn, drained

1 vegetarian bouillon cube

1 tablespoon nutritional yeast flakes

1 teaspoon garlic powder

1 teaspoon onion powder

Follow these directions to prepare the Cream of Spinach and Chile Poblano Soup vegan recipe.
Broil chile poblano in oven until blackened.

Sautee spinach with soy sauce, garlic and onion powder.

Blend chile poblano, sautéed spinach, drained corn and soy milk.

Pour mixture into pot. Stir in yeast flakes and vegetarian bouillon cube. The soup is ready once it comes to a boil.

Serve with a toasted slice of Ezekiel Bread.
