These are delicious California-style sandwiches. The taste of grilled pepper with avocado on toasted bread is just plain tasty.

Vegan Ingredients

You will need these vegan ingredients when making Grilled Pepper & Avocado Sandwiches.
dairy-free bread (sourdough, telera, foccacia and ciabatta are our favorites for this, if you can find/make them without milk/whey)

2 large red bell peppers

1 large ripe hass avocado

1 red onion

yellow mustard (optional)

Directions for Making Grilled Pepper & Avocado Sandwiches

Follow these directions to prepare the Grilled Pepper & Avocado Sandwiches vegan recipe.
Wash and slice red peppers into one inch wide strips. Slice the red onion into rings. Grill or broil peppers and onions until peppers are blackened. This makes 'em nice and sweat, a bit smokey too.

Toast the bread then spread with the avocado.

Finish by adding the grilled peppers and red onion.

Some people like this with a bit of yellow mustard as well.

PS. You can make a similar sandwich using marinated tofu instead of avocado. This version is quite tasty with Nayosa Nayonaise (dairy free mayonnaise substitute).
