Mexican food might be the easiest to veganize if you don't mind forgoing the cheese. Seriously, avocado is better than cheese, and you don't need both anyway. We choose avocados and guacamole. Beans and rice are already vegan. Health food stores and many supermarkets carry vegan ground beef, chicken strips, chorizo and even vegan sour cream. We like to dice, season and bake extra firm tofu for our tacos.
