Vegan Macaroni Salad Recipe


Here is a sample recipe that can be incorporated into a vegan diet for weight loss. Remember the key is to make eating low fat vegan food and exercise a part of your lifestyle, so you'll want to collect some great vegan recipes.

6 cups eggless elbow macaroni
2 cups chopped bell pepper (any combination of red, green, yellow or orange)
1 cup Naysoya Nayonnaise
1/2 cup sliced green olives
1 cup chopped celery
1 tablespoon dill weed
1 teaspoon yellow mustard
1 teaspoon onion power
¼ cup chopped green onion
sea salt
black shaking pepper

Cook then drain the macaroni according directions on package.

While macaroni is cooking, combine Nayonnaise, mustard, onion power and dill weed. Shake salt and pepper to your taste.

Add the vegetable items to the cooked macaroni then add the Nayonnaise mixture. Toss gently to combine (use large storable container). Refrigerate for one or more hours to chill before serving.
