Raw Food Vegan Diet

A raw vegan diet consists of raw fruits & vegetables (organic), spices, nuts, seeds and oils. The raw vegan diet excludes foods that have been cooked, processed, frozen or canned.

Benefits of the Raw Vegan Diet

Vegan raw food is fabulous for the body’s health because of its living enzymes. Enzymes deliver nutrients to the body, carry out toxins, purify the blood, aid digestion, enhance the endocrine system, balance cholesterol, fuel the brain and strengthen the immune system. In short a raw vegan diet purifies the body by detoxifying it. This prevents degenerative and chronic disease.

Enzymes are destroyed at 115 degrees of heat. If water is too hot to the touch, it is too hot for enzymes, since they have zero tolerance for heat. Therefore cooked, heated and processed foods do not contain enzymes. Heat also depletes food of vitamins and minerals.

Vegans who adopt a raw vegan diet can do so gradually. Some people choose to eat raw vegan foods until dinner time and then eat one cooked meal a day. Some choose to do raw vegan meals 3-4 times per week. The goal is to lessen the number of cooked meals and the use of processed foods.

Sample Recipes

Raw Lettuce Wraps

8 large leaves of romaine lettuce
3 tomatoes, diced
2 ripe avocados
1 small yellow pepper diced
1 ear raw organic corn
3 cloves fresh garlic, minced
2 tablespoon yellow onion, diced
2 teaspoons fresh lime juice

Mash the ripe avocados. Add all ingredients (except for lettuce leaves) including kernels stripped from raw ear of corn and mix in a bowl. Spread two or three spoonfuls of this mixture onto romaine lettuce leaves and wrap.

Note: We also have a non-raw variation: Lettuce Wraps with Peanut Sauce.

Strawberry Cream
